Quinoa Salad with Sweet Potato & Pomegranate⠀





*Ingredients 1 large sweet potato cubed 150g Feta or Goats cheese crumbled 1 Pomegranate A few spring onions finely sliced 2 cucumbers diced 1/2 cup Sunflower Seeds 1to1&1/2 cups tri colour quinoa Olive or Coconut oil Cumin ⠀⠀⠀⠀⠀⠀⠀⠀⠀ *Dressing Olive oil Honey 1 lemon ⠀⠀⠀⠀⠀⠀⠀⠀⠀ *Toss sweet potato in oil & cumin , spread on tray & bake till golden Rinse Quinoa & cook till just tender, drain well Halve Pomegranate remove seeds by tapping back with large spoon Combine all ingredients, whisk together 1/3 cup oil , juice of lemon & 2 tbls honey salt/pepper toss into salad Sprinkle with extra seeds Serves 4 You can add any vegetable you like finely diced capsicum,carrot, snow peas as well as chopped nuts give this salad some crunch and lots of texture Enjoy 😋
